Beef Hobo Pie Recipe for Camping and RV-ing

I love camping and RV-ing and cooking outdoors. Here's another of my favorite recipes I found in "Camping Recipes: The Kick Ass Chef" by my friend Ira Jacob Jones.

 1 lb ground Beef
 4 Carrots, sliced
 2 Potatoes, cubed
 1 medium Onion, sliced into ¼" pieces
  Butter

Using the ground beef, form hamburger patties. On top of each patty, layer first the potato cubes, then carrot slices, and finally the sliced onions (Make sure the onions are cut up into pretty small pieces - for me, smaller is better on this one). Carefully place patties on a sheet of aluminum foil.

Brush everything with butter and sprinkle with salt and pepper to taste.

Fold the aluminum foil securely to seal the pouch and place on charcoal or open fire.

Cook for an hour or so, turning every 15 minutes. (For me the challenge is not burning it but still cooking it enough.)

Be sure that meat is thoroughly cooked before serving.

Chopped chicken or chopped sausages can be substituted for the hamburger meat but be careful to cook thoroughly.

Variation: Place the ground beef patty on top of the onions. Then layer with potato cubes and carrot slices. Seal and cook as mentioned.

I really enjoy this one when it's colder outside.
