I have created this salad while running my health food eatery two years ago and keep having it when I need a fresh, vitamin & nutrient packed and detoxifying raw food.
Ingredients:
- 1/2 of a middle sized red cabbage
- 1/2 of a celery root
- 2 big carrots
- 2 big apples
- juice of 1 small or medium lemon
- 1/2 tea spoon of lemon peel (make sure you use an organic lemon for your peel in order to avoid the additives on it)
- 1 table spoon of organic, cold pressed sunflower oil
- salt to taste
Instructions:
- Wash and peel your veggies.
- Julienne (cut in thin stripes) carrots, celery and apples. Mix the cut veggies with your lemon juice in a bowl in order to avoid the apples from changing their color.
- Grate the red cabbage in thin slices.
- Put the grated red cabbage in a big salad bowl, add salt and lemon peel and work this mixture with your hands to make the cabbage a little juicy (try not too hard, you want it still be fresh and crispy)
- Add the other veggies to your cabbage and mix it well
It´s up to you on how sour you want your detox salad - feel free to add more or less lemon juice if needed.

Depending on how big your veggies are you are going to get 2-3 big salad portions.
