The evolution of the eye is a classic! Definitely one of the most important topics to cover in a discussion of the in depth mechanisms of evolution. I generally fall into the school of thought claiming that complex eyes evolved multiple times throughout history- convergent evolution for the win!
I actually just did a post on trilobite eyes, which were actually made of calcite crystals, so we have plenty of their fossils. (I normally wouldn't post a link to one of my posts in someone else's comment section, but I literally just posted it and it's super relevant, so please forgive me.)
