I am not sure what kind of classes would teach you about vacuum chambers. My best guess would be something with nano-tech or materials science since they both heavily use vacuum chambers. Molecular physics will most likely teach you about vacuum chambers as well but in all cases, it is likely a high level course.
I learned all of my information on my own just by cruising through Wikipedia articles and looking on manufacturers websites. There are also some decent YouTube videos that showcase some interesting effects.
