This is my entry for the #sixweekhealth challenge -week four organized by @healthsqaured.
Few days ago I walked into my friends room @ericaa to say hi only to bump into her blending rice...lol.
I was really curious and so I asked if she wanted to make rice pudding with the blended rice
She said No, that she was using it to make something she saw on YouTube for dark knees and stuff like that.
Her younger sister @cheesom then thought it wise to give a step-by-step detail of how to make RICE PUDDING because at that moment I was just talking seriously about making it.
And WAAAAAHLAAA!!! This challenge came up giving me th the opportunity to practice my newly found RECIPE.
So here I go with the steps,
INGREDIENTS:
1 cup rice
1/4 teaspoon salt
1/3 cup white sugar
1 cup milk
1/2 teaspoon vanilla extract and cinnamon
2/3 golden raisins
Water
Step 1
Add water to a large pot and bring it to a boil.
Step 2
Add the rice and salt and stir
Step 3
Cover your pot with a lid and reduce the heat to low just to simmer. Allow to boil for 15 minutes but every 5 minutes lift the lid, stir and put the lid back on. So this is done 3 times altogether.
Step 4
After the 15 minutes your rice should look like that in the picture below.
The rice should not be too dry, it should be moist with a little water remaining.
Step 5
Put the lid away as you no longer need it.
Add milk and sugar and stir well.
Bring the the heat to medium - high until simmering and then reduce the Heat as needed to maintain a simmer
Step 6
Incase you are wondering what "simmer " is , a simmer is just below a boil in terms of temperature.
What you qant to see are bubbles coming to the surface and steam rising out of the pot.
Set timer for 30 minutes, during tis time keep the simmer going adjusting the heat as needed and stir frequently.
After 30 minutes you will notice that the mixture will begin to thicken up .
Turn tbe heat to low and set timer for additional 15 minutes.
During this tine be sure to stir well atleast every minute or two to prevent a skin from forming at the top and the bottom fron burning
Step 7
After the 15 minutes you can start testing if it is done.
To test you insert a spoon in the middle of the mixture, if the spoon stays up on its own or almost stays up on its own you can go ahead and take it off the heat.
However if you like your rice pudding thick you can allow it to stay for an additional 5- 10 minutes depending on what you want and how you want it,.
Step 8
Stir In the vanilla extract and cinnamon

Stir In raisins into the mixture.
If you do not like the "chewiness" of the raisins you can soak it in how water ir alcohol (spirit) for about 15 minutes before stirring into the pudding.
This is very optional but I did this just to keep it interesting , to add some colour and still keeping it very nutritious
Here's the finished RICE PUDDING! !!
It can be served warm or chill I the refrigerator.
Refrigerating will help thicken it but be sure to put a plastic wrap against the top to prevent a skin from forming
