A smoothie that tastes just like carrot cake.... no baking involved. Is this too good to be true? As a carrot cake (or actually any cake lover) I think I found a new favorite way to start my day.
Ingredients
- 3 bananas, chunked and frozen
- 2 carrots, roughly chopped
- 2 cups almond milk (or any other nut milk)
- 1/4 cup old-fashioned rolled oats
- 1-2 tbsp. maple syrup (optional)
- pinch of ground cinnamon
- pinch of ground ginger
- pinch of ground nutmeg
Directions
- Add all ingredients to a blender and blend until smooth.
- If the smoothie is too thick for you, add more almond milk or water.
By the way, if you have pecans or walnuts, add some of them too. It definitely improves the carrot-cake-ness of the smoothie.
Oh and before you ask yourself what the black speckles are, we had some papaya seeds left, so added them too while blending. But those are totally optional, cause I'm that kind of girl who doesn't like to throw away edible things that are good for you.
Papaya seeds are nutrient powerhouses, however, do not add too much of them as they can make the smoothie very bitter. But in a smoothie as sweet as this they are well masked.
They are well known for their liver boosting properties, and they keep parasites at bay. Which is a good thing when you live in the tropics.
