Soup emergency

What do you do when you have mushrooms ..... a lot of them and you need to use them up.... Make soup of course.
ECOM (emergency cream of mushroom)
Staring off by getting some butter in a pot. Adding the mushrooms when the butter starts to bubble on a med to high heat. Cook them down for a few min then remove.

Whats next .... Lets grab a half of a white onion and chop it nice and fine , as well as two cloves of garlic.

Remember to ALWAYS USE A SHARP KNIFE. I cant stress this enough. A dull knife if dangerous. A dull knife requires more force and thats when things can go sideways.
Butter butter butter ... add more and toss in the same as the mushies. Cook till the onions are clear then add a half cup of milk. Turn down the heat and add the mushrooms. Since this was a last second decision to make, i didnt have any chicken soup . So i did the last thing I would usually do .... use Boullion. Add 4 cups of water and the appropriate scoops on whatever package you have. If you have actual broth... USE IT. Now to add the spice of life. For mushrooms , cracked pepper , sea salt , thyme and cayanne. Salt and pepper to taste , two pinches of thyme and depending on your ability to take heat will depend on the cayanne. Cook down for around 20 min and add 1.5 cups of cream. Let simmer for another 5-10 min.
Serve nice and hot to warm your insides. And this will be one of the best emergency soups you can make.
