The typical Christmas dish in Venezuela is the hallaca. It is prepared with corn flour and stuffed with a pork stew, meat and chicken. This stew is seasoned with onion, pepper, sweet pepper, leeks, capers, salt, English sauce and potato. The dough is spread on a banana leaf and olives and grapes are placed in the middle of the hallaca.

It time for rustic Christmas cooking. I have my motherβs old tattered cookbook and found this recipe for Gumdrop Cake. Tried it today and it turned out nicely... I may have over cooked it a little but it tasted good.

The Recipe makes two loaf pans.
Preheat oven to 350 F (180 C)
Cream together:
1 C. Butter with 1 1/2 C. White Sugar.
Add:
2 tsp. Vanilla
4 Eggs...beat in one at a time
2 C. Milk
4 C. Flour
2 tsp. Baking Powder
1/2 tsp. Soda
1 C. Gumdrops (cut in bits)
2 C. White Raisins ( used dark raisins because it was what I had on hand.)
2 C. Sweet Coconut flakes
Divide batter evenly between the two pans and pop into preheated oven.
Cooking time can vary depending on the pan you use.
I cooked the cakes for 1 hour at 350 F then tested with toothpick and it needed a bit more. I dropped oven temperature to 300 F (150 C) and let the cake bake another 15 min. ..In hindsight I should have taken them out at the hr!
Let gumdrop cake ripen in frig for a couple days...I already cut into one and ate a few pieces...sorry Santa..Iβve been naughty! π

Nativity: Nigeria
Taste: Yummy
Major ingredients: Plantain, pumpkin leaves, spices, salt, water fish, cow skin, periwinkle, crayfish
Quite a yummy delicacy
That does sound good with all the different kinds of seafood. I have never cooked anything with pumpkin leaves in it.
Plantain porridge is always a great meal, anytime.

4 bananas
2cups flour
3/4 sugar
I sm unsalted butter
3 eggs
1 tbsp.baking powder
1 tbsp.baking soda
Just mix all dry ingredients
Add all the liquid stuff
Mix it so well
Bake it for 1 hour with the lowest temperature
Then serve hot

This is my dish, called "Spicy Sour Fish" or in Gayo Language I call it "Asam Jeng". The fish that I cook is Giant Traveli, one of the high quality fish.
I have never tasted that type of fish. It sounds very good!

If you want to go exotic during the holidays you can try a Kapampangan dish called Betute or stuffed frog. The frogs are caught from the ricefields and are safe to eat. Stuffing is usually pork meat and aromatics
I have had frog legs once... It was good, but I suspect that this would be better!
