Buko Salad - A Filipino Dessert

Hello, I'm Jen ( @jenelyn ) !
I am thrilled to be part of the new and exciting #steemianfoodnetwork. As a group, we will strive to bring you high quality, top notch food articles, recipes and even a #food-story may find it's way into a recipe. *If you wish to skip the #food-story and introductions you can scroll down to the Buko Salad Recipe below.

So you might be wondering what my focus or niche is. Growing up in the Philippines until I was 18 then immigrating to the U.S. where I have lived the past 10 years now has given me a unique and interesting experience in the world of foods. To learn a little more about me and my story you can check out My Intro Here and my Verification Post Here.

Growing up in the Philippines can be rough, often when I was young I can remember days where I would only have a few spoonfuls of rice to eat for the whole day. Many Filipinos live in poverty conditions such as this and become very resourceful in every way possible, even with food. Many Filipino recipes are super simple, but yet very tasty.

My goal is to offer you some of the best easy to make comfort foods commonly found on a Filipino's dinner table. I am also a mad scientist when it comes to creating new and unique recipes using Mangos, I am totally obsessed with the Mango and I am always finding creative ways to utilize them in my recipes. Expect Mango recipes to come soon.

Now that you have a little tidbit about me (you will get to know me better each week as I post more, but you need to hit that FOLLOW button Follow Me!!) let's get to the yummies .. but before we do, I need to share a picture with you all of a little Filipino ingenuity and resourcefulness.

Who needs a ladder, when you have a gullible friend in the Philippines ... that's being resourceful the Filipino way, imagine what we can do with food huh?!

Onto the good stuff ... my very first recipe I am going to share with you as a super simple, yummy dessert we call Buko Salad or Coconut Fruit Salad.

What is Buko Salad?

Buko (coconut) salad is the Filipino version of a fruit salad. It's super simple to make and will leave your taste buds craving for more.

A reason to celebrate .....

The Buko Salad is a mainstay dessert for almost every special occasion in the Philippines such as birthdays, fiesta time, weddings, Christmas and New Years.

Fiesta you say? That sounds fun, tell me more ...

Just say the word Fiesta and a Filipinos face will light up in excitement. Filipinos absolutely love their fiestas. A fiesta is a special time of games, friends, fellowship, #food, Red Horse (beer), tons of dancing, karaoke, and more food. Each year fiestas are celebrated for many occasions and each barangay (town) hosts their very own at different times throughout the year. Often times Filipinos are busy for weeks preparing for them in anticipation and excitement. It is the one time when most Filipinos forget about their hardships and come together in hopes for a more prosperous year to come.

The Recipe

What you need...

You will need to find a local Asian market in the U.S. for most of these below ...

  • 2 (20oz) cans of young coconut shredded (buko) - Drained
  • 12 ounces sugar palm fruit (Kaong), drained - Use your colors of choice red, green or white
  • 12 ounces coconut gel (Nata De Coco), drained - Use your colors of choice red, green or white
  • 2 cans (15 ounces each) fruit cocktail, drained or fresh fruits (Fresh Papaya and Pineapple is Yumilicious)
  • 1 (14 ounces) can sweeten condensed milk
  • 7 ounces table cream

How to make it ...

In a large mixing bowl add the young coconut, sugar palm, coconut gel, and fruit cocktail or fresh fruits of choice. Mix and stir carefully not to mash the fruits, coconut gel, and sugar palm.

Next ..

Add the sweetened condensed milk and table cream. Again mixing carefully not to mash the ingredients.

Finally ...

Place in the refrigerator for at least 2 hours allowing the sweetened condensed milk and table cream to blend with all the ingredients and set up.

Place in your favorite serving dish and enjoy as a fantastically easy to make tasty Filipino food experience.
