Yes -- although some kinds of maple tree flowers taste better than others. The red maple flowers get more tannic and astringent pretty quickly, than some of the other maples. But I like using some here and there, especially in a mixed salad. The Bigleaf Maple has big, substantial flowers. I use them a lot when they are in season. I was in Portland, Oregon.
