So, this week turned out to be quite interesting - browsing through some food posts I came across this post by @jorgegp - he had a recipe for Arepas - and he found a similar recipe from @chefsteve which he did a "myturn" on.
So - this is a "myturn" on a "myturn" haha
I was inspired by the post from @jorgegp but checked back every now and then to see @chefsteve's take on it.
Not quite sure if mine were how they should have been but will get @chefsteve to comment on where I might have gone wrong. None the less the family really enjoyed it.
Finely chop up some tomato, carrots, peppers and spring onions.
Get some mince cooking in a pot
Mix a cup of flour with one cup of water, add a tablespoon of olive oil and tea spoon of salt. Mix ingredients and place into the fridge for 15 minutes. After 15 minutes fry in a pan with oil.
The texture of my dough was not firm enough to roll into balls, so I dropped in a pan like griddle scones.
Served with baby marrows and sweetest sweet potato I have ever tried!

@pandamama your filling sounds very delicious. I think you just got a bit off track with the arepa dough. It is important to use arepa flour, which is pre-cooked cornmeal flour. This is different than tortilla flour (masa harina) which is raw cornmeal that is treated with lime. Here is a link to arepa flour.

Unfortunately, this is one of those situations where you can not substitute another flour. I hope you can track this product down in Cyprus. If you find it you will see that it is very easy to work with. And the end product will also, taste even better! It is all about the corn flavor of the dough. Good luck in SIC!

This is really a lovely "myturn" on a "myturn" my friend! I have yet to try out arepas, but not easy to find the arepa flour here in Mauritius though!
Still I find your dish sooo tempting!
Haha - I have yet to find the arepa flour @progressivechef - these were delicious none-the-less
