Polenta with figs and vegan cheese

Ingredients:
2 cups corn grits
200 gr. dried figs, washed and chopped
¼ Cup syrup
2 tablespoons of sugar
salt to taste
200 gr. vegan cheese, diced
peeled pistachios for decoration
Method of preparation:

  1. In a saucepan with a thick bottom, place corn grits, figs, syrup, sugar, 1 tsp salt and 7 cups of water. Cover and cook over very low heat stirring occasionally until the polenta is creamy in appearance and thickens. In General it will take about 4 hours (Yes, the recipe is not quick).
  2. Add cheese, cover and cook for 5 minutes. Serve necessarily decorated with pistachios and watering on top of a thin stream of maple syrup.
