The yucca is a tuber that allows the cook to combine it with different foods and achieve delicious dishes. It can even be used for daily meals at home or as snacks for a family reunion.

Ingredients:
- Half a kilo of cassava
-Quadritos of cheese of preference
-¼ cup of milk
-1 tablespoon butter
-1 egg white
-1/4 cup of wheat flour, plus the necessary to cover them
-1 tablespoon chopped parsley
-Salt to taste - Oil for frying
preparation:
Peel and cook the yucca in plenty of salted water for about 20 minutes until tender. Drain it and remove the central strand.
Crush the yucca until it has no lumps. Add milk, egg white and parsley. If necessary, add a little more salt.
Take a quantity of the desired size for each croquette and with your finger press the dough in the middle, making a hole. Fill it with the cheese and close it carefully.
Pass the balls through flour, fry them in very hot oil and serve.
