Given the theory that you are buying steem to do that, because you are trading property for steem i guess only someone who's already seen how good the currency is could do that.

Pretty much. You have to trust the platform and the viability of Steem as a currency to be willing to accept it for purchases. I see Steem going to much higher value which is why I am willing to accept it as payment.
