The yummy Cheese and Pepper Cornbread

Essential Ingredients:
*The essential ingredients used to make the cheese and pepper cornbread are as:
1 cup flour (all purpose flour)
1 cup cornmeal
2 teaspoons baking powder
2 large eggs
2 tablespoons sugar
1 teaspoon salt
1 cup milk
1/4 cup sour cream
1 cup cheddar cheese, shredded
1/4 cup vegetable oil or an equivalent of melted butter
1/2 cup fire roasted red pepper (cut in medium pieces)


**Directions**
1.Preheat the oven to 400 degrees with a cast iron frying pan in the oven.
  1. In a large mixing bowl, combine cornmeal, flour, sugar, salt, baking powder, and the baking soda. Stir to blend. In a separate bowl, combine the eggs, milk, sour cream, and vegetable oil. Whisk to combine.

  2. Pour buttermilk mixture into flour mixture and stir until just combined, but do not overmix. Remove the pan from the oven and pour the cornbread batter in and smoothen the top. Return it to the oven and bake at 400 degrees for about 25 minutes.

  3. Remove the cornbread from the pan and let it cool at least 15 minutes more. Transfer to a cutting board. Cut in half lengthwise, then slice each half into small wedges. Serve warm or room temperature.


**Tips: You can also use melted butter instead of vegetable oil.**
