I'm not a classroom teacher now as I have been in the past. Instead, I am weight loss coach, trying to help obese and morbidly obese people change their lives and become healthy and thin.
I struggle to be a facilitator of learning as you mention. I do not want people to eat like me or exercise like me. I want them to find their own path they can sustain from now on. Often I am asked for a "food plan" or an "exercise plan," but I know these will not work. I work to help people find their own way even when they do not want to. I can give suggestions, but they need to do the work.
