One of my Mom's specialty is Moron. A delicacy that is common in our province. When I am in the Philippines I always help out my Mom in making this dish.
According to wikipedia:
In Filipino cuisine, moron or muron is a rice cake similar to suman. It is a native delicacy in the Eastern Visayas region of the Philippines particularly at the city of Tacloban in the province of Leyte and at the province of Eastern Samar
In my work as a Mechanical Engineer we have though guidelines for quality but nothing compares to my Mother's Quality Assurance Inspection (oh those watchful eyes hahaha)
Here are the ingredients and procedure to make my Mom's Special Moron.
Ingredients:
380 grams sticky rice
190 grams regular rice
2 regular size coconut(niyog)
¼ white sugar
4 pcs tablea
Process:
- Have it grind into powder the sticky rice and regular rice
- Extract coconut milk (niyog)
- Mix the coconut milk with ground rice
- Set the Fire in medium and stir it until it becomes sticky (approx 30 mins.)
- When oil is visible in the mixture turn off the fire
- Divide the mixture into 2 half is white while other half is mixed with tablea And wrap it with banana leaf
- After wrapping boiled it for 30 mins and now ready to serve
- This creates about 50 pcs. of Moron
