Steemit Photo Challenge #44: Epic Salad

Epic salads are one of the best features of life at the Garden of Eden! 


We plant, water, weed, and harvest our very own greens and veggies, and take great joy in nurturing our food every step of the way with fresh air, sunshine, well water, and dank compost! We grow kale, arugula, spinach, lettuces, purslane, mustard, collards, broccoli rabe, radish and beet greens, and a variety of potent, flavorful herbs. 

We even eat the "weeds" that pop up along the path and throughout the property! Lamb's quarter and henbit are two particularly healthy and prevalent wildcrafted greens we enjoy. Every single day, we are blessed with as many greens as we care to eat!

Because we love every step of salading so much, we're inspired to make our second entry to the food-themed Steemit Photo Challenge #44 one of our epic creations:


This beauty has fresh greens, juicy tomatoes, sautéed onions and mushrooms, pan-fried eggs, and a fresh cilantro-peanut-lime dressing, and it's so delicious and ALIVE that even the children love it!


The vibrant young children in our ecovillage love helping in the garden, and are quite capable at planting, tending, and harvesting our crops alongside our grown-up gardeners. Since they helped raise our food every step of the way, they are also excited to eat it! 



The children truly enjoy and actually choose healthy, high vibe meals over the numerous alternatives we also have available, because they live intimately connected to our food.

We have omnivores and vegetarians at our ecovillage, and everyone enjoys our daily salads! Sometimes our meat eaters will add chicken or salmon to their portions, but often they can be hearty enough to satisfy a meat eater if we include toppings like beans or cooked sweet potatoes. Thanks for your support, @efkabe!

Are you able to grow Pomegranates? I never had any luck with them here in Florida. On 2 attempts the shrubs we transplanted died and a fig tree also that came with them the aecond time.

Thanks @naturegirl; it's a blessing to eat such fresh food every day. And it's great fun to include "weeds"!! Foraging is fun and could legit save your life one day. This is some of our favorite info to share here on Steemit. Plants are amazing, and they grow abundantly for free!!!
