Vegan Kebab with toppings and oven potato fries
Kebab is a traditional meat dish which comes from Turkey. Kebab name in the literal translation means "rotating meat".
This week I was thinking about how "rotating meat" could be included in a vegan menu. So I came up with a fast-food idea, which could be used and liked by meat eaters as much as by vegans. My friends tried it not knowing itβs meatless- completely vegan. When I told them I used soy instead of meat, they almost did not believe that this was no ordinary beef-chicken kebab. I found out that spices are the most important thing about good kebab and with using right spices we could prepare anything as it tastes exactly like meat. Spices are used in our diets not only to improve the taste, but also to increase the nutritional and energy value. Herbs and spices, that we should use daily, with some knowledge of the effects, can have strong positive effects on regeneration of the internal organs, they balance our moods and hormones.
Ingredients for 4 kebabs:
150g of dried soy chunks
1,5 teaspoon of salt
a pinch of black pepper
cayenne pepper
sweet red smoked paprika
coriander
dried garlic
ground oriental cumin
died fenugreek seeds
fresh fenugreek leaves
a tablespoon of Dijon mustard
a tablespoon of soy sauce
300 g of potatoes
roughly ground salt
1dl of soy milk
1dl of extra virgin cold pressed olive oil
salt
lemon
3 teaspoons of Dijon mustard
dried garlic
curry
turmeric powder
ginger
dark balsamic vinegar
2 tablespoons of coconut cream
1 teaspoon of parsley
1 teaspoon of basil
1/4 of teaspoon of coriander
4 bread buns
4 tablespoons of extra virgin cold pressed olive oil
2 scallions
150g of cherry tomatoes
150g of cabbage
a few lettuce leaves
Put soy chunks in a bowel and shake it with spices: 1,5 teaspoon of salt, a pinch of black pepper, 1/4 teaspoon of cayenne pepper, 1 teaspoon of red smoked sweet paprika, 1/2 teaspoon of coriander, 1/2 teaspoon of dried garlic, 1/2 teaspoon of ground oriental cumin, 1/2 of teaspoon died roasted fenugreek seeds and 1 teaspoon of fresh fenugreek leaves.
Pour some hot water (about 3dl) in a bowel, so all the chunks are covered. Add a tablespoon of soy sauce and a tablespoon of Dijon mustard and mix it. Leave it overnight, that the chunks get well saturated in spicy water.
Vegan Mayo
Pour one deciliter of soy milk in a blender and add one deciliter of cold pressed extra virgin olive oil, but don't just pour it inside, it is very important, to add the oil slowly in drops, so the mixture gets condensed. It is recommended to use a dropper.
When its all condensed, add two tablespoons of lemon juice, 1,5 tablespoon of salt, a pinch of dried garlic, curry and a teaspoon of Dijon mustard. Blend it and pour half of it in one cup and half in the other.
Vegan Kebab sauces
Spicy cayenne- dijon sauce: Mix one half with two teaspoons of Dijon mustard, 3- 4 drops of dark balsamic vinegar, a pinch cayenne pepper, red smoked sweet paprika, and just a small pinch of curry, turmeric powder and ginger.
"Yogurt" sauce: Mix the other half with two tablespoons of coconut cream, a teaspoon of fresh chopped parsley, a teaspoon of basil and a bit of coriander. Add a bit of salt if needed.
Oven potato fries
Peel 300 g of potatoes and slice it on sticks measuring 5cm in length and 1x1cm in width. Dry it with a paper towel of a kitchen cloth. Place it on a baking dish, coated with baking paper. Sprinkle it with some virgin oil and some roughly ground salt. Bake for 40 minutes at 230 Β° C.
Clean and wash vegetables. Cut 150g of cherry tomatoes on quarters, slice two scallions, cut lettuce leaves on smaller pieces and grate 150g of cabbage with grater.
Strain excess water, wring soy chunks with your hands and cut it on slices. Heat 2 tablespoons of extra virgin cold pressed olive oil in a pan and add soy chunks. Fry it for 3 minutes then add a tablespoon of soy sauce and optionally a little bit of more spices and leave it on the stove for another minute.
Cut four bread buns in half and spry it with some extra virgin olive oil. Heat up a pan and fry it really quickly on both sides.
Put fries on a side of a serving plate, put the bottom of one bread bun on the other side and spread two tablespoons of spicy cayenne-dijon sauce on top of it. Add some lettuce, cabbage, scallions and tomatoes. Put 3- 4 tablespoons of soy meat of top of that and pour 2-3 tablespoons of "Yogurt" dressing over it. Cover it with the top piece of a bread bun.

Really diggin' the fact that you were able to produce this with zero meat! You're probably right about the spices and consistency being the 2 most important thing in emulating this particular meat.

Wow! What a great recipe! Really bravos, my mouth watering when i see this vegan kebab, maybe is the first time i hear about it, because normally kebab have to be a meat in the recipe, but you do it successfully vegan.
I found that vegan dishes can be prepared so that they taste like meat and also look like meat dishes.

Beautiful! Love all the ingredients and thanks for the thorough instructions. I have not tried soy chunks/curds but have heard a lot of good. I am definitely going to try this sandwich. Thanks for the inspiration. Good luck.
I think you'll definitely enjoy this sandwich but remember to soak the dried soy sauce into hot spicy water and leave overnight, or cook them in spicy salted water (boiling for 2-3 hours), this way dish will not be dry and it will have a flavorful taste.

Wow, you sure had some prep going into this
Actually kebab needs very little preparation time because it's a fast food. The only thing I had to prepare in ahead was dried soy chunks and, as I said, they should be soaked in spicy water overnight. If this is not possible, they can be also cooked in spicy water (boiling 2 to 3 hours).
