Using black pudding (or blood sausage, as it is known in the US) is very common during the long winters in my parts. It also stars in one of the most classic British breakfast sandwiches ever!!!
Since I had one of those black pudding beauties, hand crafted by a sausage maker extraordinare friend of mine, still left in my freezer, I decided to treat myself with this yummy sandwich. Adding fresh dandelion and lambs lettuce from the garden, an egg, with, of course, a slice of roasted apple - apple and pork, a match made in HEAVEN!
On top of it being easy to make, this sandwich is the best hangover cure ever!!!
METHOD:
Bake fresh breakfast buns or use good quality store bought ones. I made a few simple cheese muffins....
Fry a slice of an apple (use a tart apple) in butter, season with salt and pepper. Fry your black pudding slices until crispy and warm through the top of the bun. Cover the bottom part of the bun with cheese and grill in the oven.
Fry an egg, sunny side up. Assemble the sandwich. Serve with fresh salad leaves and mustard. EASY!!!! ENJOY YOUR BREAKFAST!

Diggin the dandelion and lambs lettuce from the garden and of course eggs! The roasted apple was a nice surprise and..... pork is always a good one for breakfast sammies !

Haha, ok, let me elaborate: blood sausage obviously contains blood, therefore zinc and iron, two minerals that boost ones energy and help the body heal.
Dandelion is well known for containing a lot of vitamin C and B complex and is extremly efficient in helping the liver and kidneys to clear out waste.
When you add an egg, apple and fresh bread to the story, you get the perfect hangover cure! Trust me, tested! ...an ice cold beer on the side helps too ;)
