Week #25 is nearing closing time so I'd better get my act together; have decided to stay local, and introduce Steemit to a proudly South African staple called 'Vetkoek' - direct translation 'Fat Cake'. If you like Donuts, you certainly will enjoy Vetkoek :)
As a little girl I used to believe the inventor of Vetkoek was my mother as she would magically make this when there was no bread in the house, but of course it goes back much further here in South Africa, to the days of the Voortrekkers who found it much easier frying bread dough than having to make a fire and makeshift oven.
Nowadays, one can find Vetkoek shops all over South Africa and buy them either plain, filled with savory or curried ground Beef or Apricot Jam/ Jelly for those with a sweet tooth.
According to Wikipedia, similar versions are found in other countries as well; the Dutch have ‘Oliebollen’, Mexicans have ‘Sopapillas” & in the Caribbean they’re called ‘Johnny Cake’ – now I wonder who Johnny was?
Just one more story; Mom would gift friends with a loaf of freshly baked bread and they thought it was pure heaven. My 4 brothers on the other hand, used to run to the corner cafe and buy a half loaf of mass produced bread with their pocket money as a treat!
We are a weird bunch us humans, always thinking the grass is greener on the other side!
Or run out to your local bakery and buy a bag of their dough :)
For the dough proving, I improvised by placing it in a proudly South African invention called the Wonderbag, should work well although it was not designed for that purpose.
Note the Wonderbag is normally used as a kind of non- electric and non- gas slow cooker. Stews, soup or dry beans or other legumes are cooked for about half an hour on the stove top and then transferred to the Wonderbag and left to do its' magic while you go to work or out to play.

Excellent creation as usual.. I've never heard of this "fat cake," however, I do like the sounds of it. You've introduced a lot of distinctive sandwiches and foods to SSC over the past few weeks, so thx for that!
