Shiver me timbers! Theres a chill in the Air today in England! The clocks are going back and the weeks are flying by, but I'm here again for week 12 with a sweet treat full of tropical flavours- The Pirates Suprise! Homemade Lime Curd with caramelised Rum soaked Bananas and Coconut, encased in beautifully soft white Tiger bread. It's a sandwich that's trying it's hardest to be a cake.
The first step was making the Lime Curd which was done by zesting and juicing the fruit, whisking in sugar and eggs, heating and stirring for 5 mins, then stir in butter and cool.
My mum's recipe, it's 10x better than anything you can buy at the shop, great for using up old dried up lemons or limes and is very quick to make.
Soft light Tiger bread with a chewy crust, thickly smothered in Lime Curd, then it's time to get cooking and caramelise some Bananas :-)
Melted butter in a pan, brown sugar, Bananas then Rum. Two minutes and there done!
Scatter some Coconut on top and it's ready to be devoured. A wonderful combination of flavours. sweet, tangy, sticky and soft with boozy fruity undertones! :-)
