Kitchen Witch Thursdays - Brookie Bars

So of course it's that time of month, meaning my roommate and I are both craving chocolate like crazy. I figured brookie bars were the best solution, so here's my recipe for them :)

You'll need the following;

  • A boxed brownie mix and everything to make it (or your own from scratch if you prefer)
  • 1 stick butter (8 tablespoons give or take)
  • 4 tablespoons brown sugar
  • 2 tablespoons sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon cornstarch
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups flour
  • a bag of chocolate chips

Yeah, I used a boxed brownie mix. Easier that way, and just as good as home made stuff. Plus extra chocolatey goodness.

We have some milk chocolate chips but I needed those for something else so I used the peanutbutter flavored ones instead. Still really great though ^^

Preheat your oven to 350 degrees.

Then go ahead and make your pair of batters. For the brownies, just follow the box instructions - usually 2-3 eggs, some water and some oil.

For the cookies start by creaming together the butter, brown sugar and regular sugar. Add in the egg and vanilla. In a separate bowl mix the cornstarch, baking soda, baking powder, salt and flour then add them to the other mix until it's well mixed and add the chips in last.

Pour the brownie mix on top and use a spatula to spread it out. Then pop it in the oven for ~30 minutes.

And there you go! I stuck a knife in the middle to make sure it was done and it came out clean, but if that doesn't happen for you just give it another 5 minutes at a time until it does.

Then slice, eat, and enjoy! I know I'll have to be containing myself to a slice a day because otherwise I will probably eat all of this at once, but to me that's just a sign of how good it is :D

I would have pour lots of chocolate chips in because I love them! :D

This is my typical go-to cookie recipe and typically it only calls for 1/2 cup chocolate chips but the bag is around 2 cups and I typically add a whole bag if I have one. The brownies also have chocolate chips and chewy fudge pieces so it's a crap ton of chocolate and I'm totally with you on the love of chocolate ^^
