Parsley - A Sunday Scent Experience

Parsley, a common plant with a flavour punch!

Parsley is a biennual, meaning that it generally takes two growing seasons to flower and produce seeds.

I let a plant go to seed last year and I was rewarded with hundreds of new parsley plants this summer. I put them to good use today.

After a rinse in cold water, I pulled the leaves from the stems and laid them out on 10 dehydrator trays. Into the dehydrator they go, on low, for about eight hours.

Afterwards I went outside to work on cleaning up the garden. When I came back inside, I remarked to my hubby, "Smells like potatoes cooking in here." He said, "Parsley potatoes?" Yup, but it was the smell of parsley, not potatoes, that filled the house.

Ten trays of fluffy parsley, enough to half fill one of my largest bowls. What would I do with it all?

Not a problem once I gave it a spin through the little Ninja food processor.

And there you have it, plenty of organically grown parsley to provide us with seasoning for soups, meat dishes and enough parsley potatoes to last the long cold winter!

Very nice! How long can you store dehydrated parsley?

I only store it until the fresh parsley is growing in the garden again. I imagine after a year it will start to lose flavour.

Parsley is one of my mainstays. I put it in everything right along with my salt and pepper. Growing our own herbs sure saves us lots of money and I know what I'm eating too. I dehydrate mine as well and save. Though without electricity (I live off-grid) I employ a different technique. I dry things on trays on my car dashboard, haha. Getting too cold to do that now though.

Lovely post! Very nice too see each step in the process! I am a parsley addict. I buy fresh parsley every week to put in...everything! But potatoes with butter, salt and parsley is sure one of my favs! We use to eat that in spring, when the white asparges arrive (the dutch white gold). Love this! Thank you Anise 😘
