Sunday Scent Experience - Homemade Chicken Noodle Soup - Wellness is Brewing - Recipe Inside

When colds are starting to surface in our home we make homemade chicken noodle soup. I love knowing what is in our soup and that I can add just about whatever I can think of that will be good for us. We try to use Organic everything when cooking soups. So no, I do not go and grab a can of soup from the store...there is nothing like homemade goodness. I cooked this in a 10.5 qt. stockpot.


Ingredients:

  • 2 tbs olive oil
  • 1 tbs butter
  • 3 boneless chicken breasts poached
  • 1 onion diced
  • 3 carrots peeled, sliced thin and diced
  • 2 celery stalks sliced thin and diced
  • 3 cloves garlic minced
  • 8 cups chicken broth
  • 2 bay leaves
  • 2 tbs dried parsley
  • 2 tbs dried oregano
  • 2 tbs dried basil
  • 2 tbs Nutritional Yeast (optional)
  • 2 - 3 tsp garlic powder
  • 2 - 3 tsp onion powder
  • 16 oz. package wide egg noodles cooked
  • 1 tbs squeezed lemon juice (optional)
  • salt and pepper to taste

The Fun Part:

  1. Cook egg noodles according to package instructions, drain and set aside.

  2. Poach chicken in stockpot on stovetop. I use about 10 cups of water for this.

  3. While chicken is poaching cut up all the veggies (onion, carrots, celery and garlic) and set aside.

  4. Once chicken is done poaching drain and set aside to cool. Once cooled enough to handle, shred with 2 forks or use a food processor.

  5. Add olive oil to stockpot on medium high heat to warm.

  6. Add the carrots, celery and onion and sauté for 6 - 7 minutes or until they begin to soften. Then add in the garlic and sauté for another minute or two.

  7. Add in all of the seasonings except for the bay leaves and lemon juice. At this point I also add in the butter as the seasonings are simmering with the vegetables. Stir intermittently for 2 - 3 minutes.

  8. Slowly stir in the chicken broth.

  9. Add the chicken, cooked noodles and bay leaves to the stockpot and bring to a low boil. Boil for 5 minutes or until all vegetables are tender and soup is warmed through. At this point I taste the soup to determine if more seasoning is needed.

  10. Stir in the optional lemon juice and add salt and pepper to taste. Remove bay leaves and serve immediately. Then Enjoy the Wellness~
