My mom's favourite Flat Bread(Chapati)

My mother was a great cook, God rest her soul in peace, she died. My mom could cook many things in great style. Before every meal our mouth could water with anticipation. We looked forward to my mother's meals.

Pumpkin Roti

Roti is the Indian version of flat bread. It is a sort of pancake better known as chapati among the Swahili.

The only difference with my mom's recipe was the absence of eggs and addition of pumpkin puree.

The Recipe

  • Half a kilogram pumpkin
  • 1 kg wheat flour
  • 500 mililitres cooking fats
  • A pinch of salt
  • 50 grams sugar
  • A cup of milk.
  • A jar of water.

Method

  • Bake the pumpkin till soft
  • Blend it into fine puree.

  • Add the milk, the flour, salt and sugar to taste.
  • Knead the dough till it can be rolled on a roller.
  • One can add some water if the dough is too hard
  • Some little oil can be added to the mixture.

  • Next make sizeable balls that when rolled will make the size of roti you want to make.
  • Then roll into thin flat and round chapati ready to fry.
  • Fry on the pan enduring to roast both sides.
  • The ingredients above can make about twenty rotis.

Roti can be served with meat, chicken or fish stew. Vegetarians can still serve with vegetables.
