Start Where You Are

I've tried and gone through editing some works I've created before.
But something just isn't right.
It has been a learning experience in itself, however it goes against one of my basic principles for yoga and life.

Start where you are.

Going back and seeing where i have been has been great, especially for my ongoing support and encouragement to mothers and those expecting or wanting children. Particularly those who want to to take back birth and their lives!

But why isn't it flowing?
I have been thinking and thinking about how to go about this platform.
I am used to working w women, only.
So it's been interesting to figure how to go about my activities here.

I am a pretty open person, simply for my own selfish improvement.

Right now my main focus is on finding balance and ecstacy in the duties before me. My self, my children and husband.

In my on going journey to health, I have my bumps in the road.
I get my mood shifts and down swings, but i am far more graceful and compassionate to myself now than i have ever been.

Today I fed my family from my heart.

It's funny how perspective can change a situation.
We really need to go grocery shopping, but it's much too cold out. We are pedestrians.
I kept saying, "i can make tomatoes and potatoes." It didn't sound like much.
But a few minutes in the kitchen had my noodle going.

Clean, Cut and start cooking my tomatoes down. A little sugar, salt, pepper, parsley.

Oh yummy i can't wait to use those stewed tomatoes.

Oh we have a little cheese!
Now im really thinking and grooving.
Buscuits!
Ill make tomato and cheese buscuits!
Here we go.

Now my tomatoes are almost done. And im going to Cool some off to add in place of some milk.

Ive got my flour, flax seed, celtic sea salt, fresh ground pepper, baking powder and grassfed butter batter, going.
Ive minced shallots, garlic, mozzarella, sharp cheddar, minced parsley and cilantro.
After combining my milk and tomatoes w my dry ingredients i am feeling pretty good.
I incorporate my minced ingredients w my dough and a little extra flour to balance the moisture.

In to the oven they go!
And I'm excited.

Im pan frying golden beets, potatoes and chorizo.

The more i cook the more the picture clears and i feel good.
I feel great
I feel ecstatic!
I love making simple, filling, creative meals for my family.

This duty is one i feel so happy to fulfill. Using whole food ingredients, making them fun. Never the same dish.

We were thrilled and amazed and. Oh so happy!.
I randomly bought cream cheese at a mom and pop convenient store.
Yes, i did make a tomato and cream cheese spread for our buscuits.

For times when im not as energetic, making a meal like this helps me feel on track.
I acknowledge there is always more to do, realizations to uncover.
Im so thankful for how far I've come.
I do still have my bouts of anxiety and fear. But wow, how's much joy and life and love, i can feel, even when it seems like I'm coming up short. Every moment is a chance for new choices, opportunities to change, and even of if it seems like nothing to anyone else, if u notice that one thing...That one step you chose different... that can turn a down swing in to an up swing.
Always look for your best feeling thing in the moment. Give yourself credit.
You are where you are.
You are amazing.

A Persephone Original Recipe
Tomato and cheese buscuits

2 c org AP flour,
1/2 C ground org flax seed,
1 1/2 tsp celtic sea salt,
1/2 tsp fresh ground pepper, 2 tbsp baking powder and

5 tbsp grassfed butter batter,
1/2c org coconut milk
1/2c stewed (reduced) tomatoes(cooled)

Combine
1/2c minced shallots
3cloves minced garlic, 1 1/4 c mozzarella and sharp cheddar, cut in 1/4 in cubes,
1/2c minced parsley and cilantro.

Rendered fat*optional

  1. Add dry ingredients to a bowl.

  2. Crumbled chilled cubed butter in to the flour.

  3. Incorporate milk.

  4. Incorporate tomatoes. Adding more flour or milk as needed.

  5. incorporate minced ingredients and a little extra flour to balance the moisture.

  6. Pre heat the oven to 425. F and do some other things.

  7. When the oven is ready roll buscuit dough out on to a Floured surface. Roll your dough out and fold it in four then roll out to desired thickness (at least an inch) and double or triple the width of your buscuit size.

  8. Cut out your choice size of pastry. Remember to press the cutter down, w out twisting it to prevent rise interference.

  9. You can re roll the dough or shape the scraps together (that's what i did)

  10. Dip your buiscuits in the rendered fat of your choice or use a brush.
    I brushed on rendered Lamb fat to my buscuit dough.

  11. Bake 15-18 minutes or until the top is browning.
