Last night I made lasagna for dinner.
I don't really have a recipe. Kinda just whatever I feel like at the moment.
For this one I sautéed some mushrooms, jalapeños, and Hatch green chili peppers (take that, Pueblo!)
Then added Paul Newman's marinara (I know, but I didn't have time or energy to make it from scratch, and Paul Newman's non-meat sauces are pretty good for coming out of a jar) for the gravy with some Ancho chili powder, fresh shaved garlic, smoked paprika, and black pepper. Once it got to a simmer I added a bit of heat with about a tablespoon of Karma Sauce Fennelo from the Heatonist store in Manhattan, and about a tablespoon of Naga Jolokia Ghost Pepper sauce that @sgt-dan sent me from a little local shop in Leesburg, VA.
I seem to recall whatever recipe I was supposed to be using calling for four cups of mozzarella. So I used eight - four in the cheese mix (with whole milk ricotta, of course) and four in their own layers. Also used ½ cup of grated parmesan and ½ cup of grated romano. Somehow @benfranz, despite being mildly lactose-intolerant, did not wake up in the middle of the night to puke this up. #winning
Here's the finish right after I took it out of the oven. I managed to let it cool for about 20 minutes, which should be impressive for those who know me and my lack of patience.

Ya, I can't bring myself to substitute. Ben keeps asking me to either use fake meat or fake cheese but it just wouldn't be the same ...

Non meat lasagna for me, whole life vegetarian,was not quite sure if ot had it, but treat me to a veggie one,you look like an excellent cook.
