My Cooking Adventure: Roti Puri Recipe

Hello dear friends. Today I'd like to share a simple food recipe which I learned during our lockup at home due to Movement Control Order in my country. I got this simple recipe from my sister who is a seasonal chef/baker.

This delightful food is called Roti Puri. Its light, fluffy and crispy when deep-fried. Usually it is traditionally served with curry and chutneys for a snack.

Ingredients: 2 cups whole wheat flour, 1 teaspoon Mauripan yeast, 1/2 teaspoon salt, 3 tablespoons cooking oil, 2 tablespoons sugar (can be reduced if you don't like sweet), 175ml hot water, 40-50ml water, 3 - 4 cups of Oils for frying.

Method:

  1. Mix salt, 3 tablespoons of cooking oil, sugar and water.
  2. In a large bowl, mix flour and yeast.
  3. Then pour the mixture of salt, cooking oil, sugar and water into the large bowl.
  4. Mix it until it's texture is like breadcrumbs.
  5. Add a little water and mix until it becomes a dough.
  6. Let it rest in a bowl covered with a clean, damp cloth for 30 minutes.
  7. Then divided the dough into 12 small round pieces
  8. Take the first ball of dough and roll it very... very thin (1-2mm) - it's important for the dough to be very thin or it will not puff up.
  9. Fried the thin dough into hot boiled oil and gently scoop some hot oil over the top, gently pushing down on it - this will help it puff up.
  10. Lastly, remove from the oil and drain on a rack.

I preferred to eat this puri with Sardine. So I opened a can of sardine in tomato sauce, chopped some shallot, chilies, and fried them.
