Hello dear friends. Today I'd like to share a simple food recipe which I learned during our lockup at home due to Movement Control Order in my country. I got this simple recipe from my sister who is a seasonal chef/baker.
This delightful food is called Roti Puri.
Its light, fluffy and crispy when deep-fried. Usually it is traditionally served with curry and chutneys for a snack.
Ingredients:
2 cups whole wheat flour,
1 teaspoon Mauripan yeast,
1/2 teaspoon salt,
3 tablespoons cooking oil,
2 tablespoons sugar (can be reduced if you don't like sweet),
175ml hot water,
40-50ml water,
3 - 4 cups of Oils for frying.
Method:
- Mix salt, 3 tablespoons of cooking oil, sugar and water.
- In a large bowl, mix flour and yeast.
- Then pour the mixture of salt, cooking oil, sugar and water into the large bowl.
- Mix it until it's texture is like breadcrumbs.
- Add a little water and mix until it becomes a dough.
- Let it rest in a bowl covered with a clean, damp cloth for 30 minutes.
- Then divided the dough into 12 small round pieces
- Take the first ball of dough and roll it very... very thin (1-2mm) - it's important for the dough to be very thin or it will not puff up.
- Fried the thin dough into hot boiled oil and gently scoop some hot oil over the top, gently pushing down on it - this will help it puff up.
- Lastly, remove from the oil and drain on a rack.
I preferred to eat this puri with Sardine. So I opened a can of sardine in tomato sauce, chopped some shallot, chilies, and fried them.
