It’s 3 am in Bangkok and I’m at the cart of the best BBQ guy in town.
The long line in the back are chicken wings he’s cooking for people yet to arrive. The five brown sticks of chicken liver he’s already cooked and is now briefly heating up for me.
I will eat one while walking home and the others will last a couple of days in soup or salad. They cost about $3 usd total.
The two filet sticks are for the guy next to me. He will eat them right there.
My BBQ chicken guy arrives at about 1 am and leaves sold out at 5 am. He hooks up his motorcycle to this cart and then he’s gone until tomorrow.

Ahhh... yummy. I was in Thailand not too long ago and experienced a similar thing. BBQ carts rocking up at midnight and then selling until the wee hours and then being gone again come daytime.
