Daytona 500 Nascar Party, White Chicken, Texas Style

My wife@texasbodi and I are getting ready for our annual Daytona 500 party. We have a few friends coming over to watch the race. Weather in Texas is overcast, in the 50's, with a slight chance of rain. We are looking forward to a great race. Chicken is on the grill. There are several different ways to make White Chicken Sauce. I have tried the Cornell recipe in upstate New York, The Recipe in Lower Alabama, and a different White Lemon recipe in North Carolina. Today, I made my own personal recipe, Texas style.

I am cooking on an old school, block and grate grill today. I started with a bed of charcoal and gradually added a few sticks of Texas Swamp Oak to build a nice bed of coals. You want to make sure that the fire is not to hot. It takes about 30 minutes to establish a good bed of coals.

I started with four 2.5-3 pound birds. Split them in half with a good knife through the breast plate. I like the smaller birds, they seem to cook a lot better. I grill them on both sides for about 15-20 minutes to tighten up the skin and get a little crispness before adding any sauce.

My White Chicken Sauce is my personal recipe.

Apple Cider Vinegar
Olive Oil
Eggs
Dijon Mustard
Garlic Powder
Salt
Black Pepper

It is pretty simple. You can play with the ingredients to your own taste.

The chicken takes about 2 hours on the grill. It is cooking great and the smell is pure heaven, I will have it ready for race time. Enjoy the race. Hope you enjoy this post.

I've never grilled whole chicken like that. Your sauce recipe makes them turn out amazingly, I'll bet.

Ah, Nascar time already?! Texans do love their Nascar! This Texan loves her some grilled/ smoked chicken! LOL Your recipe looks great, may have to try it one day! I bet the eggs in it make the skin very crisp. Thanks for sharing! Enjoy the race!

Enjoy the chicken as far as Napcar and the 500 it has zero coverage here in the North East. Hope the races are safe today and not a lot of blocking like yesterdays race. Who you rooting for by the way?

Thanks, I am on Keselowski and Blaney. My wife @texasbodi likes Chase Elliott. My daughter is rooting for Logano. I expect a pretty clean race til the last 25 laps, then wrecks.

I don't know why, but some of those chickens look like a de-shelled turtle. I'm sure it was delicious though!
