It is always very hot in Dubai and the humidity makes it even worse. Luckily, the locals realized the climate disadvantage and built places where you can stay inside and do things. Don't imagine just normal shopping centers - it is more like a city connected to the subway and everything else, so there is no reason to go outside at all. There were aquariums, small cities, ski slopes, ice rinks and all other crazy stuff you can put inside of a building. The subway is conveniently connected with those attractions and you can use it to travel around.

Well I guess it depends on the month. Right now it's really that hot, but when we were there we could comfortably walk around the city all day with nice sunshine (not too hot) and it even got chilly at night. So I recommend coming before the heat wave (November-February)
