I'm still learning fall being that San Diego barely has one. If you don't get snow, woody herbs like rosemary and sage are good fall plants, and of course most squash. It's also a great time to turn all the summer crops and let them compost for spring planting.

Vines, herbs of all kinds, and even fruit trees are great plants to start during the fall when you live in a temperate climate like Los Angeles.
