Thank you. Yuca is very starchy and filling. It has a sweeter flavor than potato, is more alkaline and doesn't have acrylamide like potatoes. It's a bit more tedious to work with. It has a thick bark that has to be removed and takes longer to cook, but it's soo worth it. Makes great fries too!
