Howzit going hivers, lockdown is going to be extended here in sunny Scotland for a few weeks more, but on the positive side, grocery stores are looking full again. I thought I would share one of my favourite currys that I love to make, it is my version of the curry dish pasanda, I usually has meat in it and yogurt, but I have vegangised it by making a cashew, nutrional yeast flake sauce.
First I soak cashews in boiling water and with nutrional yeast flake and blend it up .
For the curry part I add mustard seeds and Cumin seeds.
Pumpkin seeds.
Chopped brinjal /eggplant.
Brais the brinjal a bit and add onions and garlic.
Then chickpeas.
Some garam masala, curry powder, chilli powder and turmeric with two veggie cubes.
Let it simmer for 15 minutes with a bit of water and add the cashew mix.
And there you have it, a healthy alternative to an awesome dish, really worth a try. Thanks for stopping by and enjoy the rest of your week.

How do you cook the bulgur?
Thanks, just like couscous, just a little longer, just pour in water so it just covers and simmer for 10 minutes, keep sturing , it sucks up all the water and keep sturing now and again while it is cooling down
So I should cook it? I never cook couscous just let it sit with hot water.
I bought a bag a while ago and it just waiting to be used :D
Yeah, give it a go, you can even make it in the microwave if you worried about burning it in the pot, if you don't stur it often while it is simmering on the stove, it will stick to the pot, so microwave is a little easier, not as much sturing
I dont mind cooking on stove :) Always prefer that than microwave.
I will... eventually I will! I love all kinds of cooked grains.
