Hi and welcome to my healthy Asian inspired vegan dish. It is a sweet and sour leek stir fry stuffed in a sweet potato and sweet sticky tofu fingers.
Ingredients for tofu marinade
2 squeezed nectarines
2 tablespoons ketchup
2 tablespoons soy sause
1 tablespoon liquid smoke
1/2 teaspoon smoked paprika
1/2 teaspoon ground coriander
Pinch of salt and cayenne pepper
I left it to marinade for a couple of hours.
I also baked sweet potato for the base.
Ingredients for stir fry
1 1/2 leeks
1/2 cup pumpkin seeds
2 onions
200g mushrooms
5 garlic cloves
20g ginger
1 cup sweet corn
1 cup peas
250g mango
1 lemon squeezed
1/2 teaspoon smoked paprika
Pinch of salt and cayenne pepper
Just a matter of stirring and frying
Then the tofu, I fried and dumped back in the marinade and fried again.
Then Dumped back in the marinade and served. Opened up the sweet potato and stuffed it.
Well that's my creation hope you like it ☺️
We ARE making a version of this, this weekend! Not sure if I can get tempeh yet (the tempeh people had to close over covid due to not enough business) but I will try!! If not, we will improvise. 😆
