So,this is a recipe I have been developing for a couple of months(when I got my first cookie dough craving since becoming vegan :) It's really quick and yummy and best of all sugar free!
Here it goes:
prep time: 15 min
total time:25 min
serves: 4
INGRIDIENTS
Dough
1\2 cup finely ground oats
1\3 cup peanut butter
1\2 cup mashed chickpeas (from can or cooked)
1\2 cup almond milk (enough to soak the oats)
1\4 agave syrup (I prefer black agave nectar but you can choose your own sweetener)
1\4 cup coconut flour
pinch of salt
pinch of cinnamon
pinch of bicarbonate of soda (don't skip!)
Toppings
1\4 cup melted coconut oil
3\4 cup cocoa powder
2 tsp agave syrup (or to taste)
2 tsp peanut butter
3\8 cup coconut flakes
blueberies (or any fruit you like)
Instructions
Soak the ground oats in almond milk,a few minutes schould be enough,as they soak up the liquid quicker then whole oats.
Mix all the ingredients for the dough together:soaked oats, peanut butter, mashed chickpeas, agave syrup and the spices except coconut flour.
Whisk them all together until well combined-and then add coconut flour little by little until you feel you reached the right consistentcy for a raw dough.
The dough is all done, you just need to put it in serving dishes!
And then leave it in the fridge for 10 min to cool.
Chocolatte topping
Mix together the coconut oil, peanut butter, agave syrup and cocoa butter.
Top tipp:put the cocoa powder trough a sieve to prevent your topping from being clumpy.
This is what it look like finished :)
And thats basically it.Now all you need to do is take the dough from the fridge and garnish it.(my favorite part)
Here they are :) I even made one topping just out of crushed blueberries and agave syrup for a friend who doesn't eat chocolate.
The variations are endless,so be creative.
Hope you had fun and Bon Appetite!
I have to try this :)
Looks yummy, welcome to Steemit !
