Hey Steem-fam! Today I want to share with you one of my favourite pasta recipes. This one has been a firm staple in my family for many years, and I think it's just as good now I've put my vegan spin on it!
I just love pesto, and one of the hardest realities I faced when going vegetarian was that it isn't suitable for veggies! Thankfully there are now lots and lots of vegetarian and even vegan varieties so us plant munchers don't have to miss out on the good stuff!
The original recipe has feta cheese in it, and I was curious to try a new 'Mediterranean' vegan cheese that I found so what better opportunity than in a delicious pesto pasta.
So without further ado I bring you my Mediterranean Pesto Pasta!
Ingredients (to serve 4):
- 150g of vegan pesto
- Approximately 4 cups of chopped veggies (I used peppers, red onions, courgette and tomatoes)
- 150g hard vegan cheese
- 3 cups of penne pasta
- 2 tsp coconut oil
- 1 tsp garlic salt
- Salt and pepper
Method:
- Preheat the oven to 200c.
- Meanwhile, wash and chop your vegetables.
- Cut the cheese into small cubes.
- Place in a baking tray with some oil, garlic salt, salt and pepper and shake the tray until the veggies are evenly covered in oil.
- Place in the oven and cook for 15 minutes.
- Remove the tray and shake the veggies again to ensure they cook evenly. Return to the oven and cook for a further 15 minutes.
- Now, boil some water over a medium heat and add the pasta.
- Cook for 5-8 minutes or until al dente.
- Remove the pasta from the heat, drain and pour into an oven dish.
- Add the pesto and stir well.
- Then add the veggies and mix in.
- Finally add the cheese pieces.
- Return to the oven for 5 minutes, then remove and stir the cheese into the pasta.
- Enjoy!
I just love this pasta dish, it's so so simple but has such an amazing combination of flavours and combines some of my favourite things- tomatoes, pesto and pasta. You can't go wrong!
I definitely think I'm onto a winner veganising this and I'm sure you'll agree if you try it. The cheese didn't melt quite like a feta but the flavour was really good. Perhaps I will have to experiment with ways to soften it before adding it to the dish.

Oh you really make me hungry haha!! i love pasta with pesto and veggies!! I use to make my own pesto, it is cheaper and healthier, but when it has to go fast, this is the best option!! Thank you for sharing such a delicious recipe;)
