Sweet potato heaven! 😝

Hi friends, I'm back again with another suuuper easy recipe idea! (But let's face it- do I ever cook anything that isnt?)

This is one of my go-to simple dinner ideas, its takes hardly any time at all to put together and is very nutritious and satisfying, featuring 2 of the essential ingredients in any vegetarian's pantry- sweet potatoes and hummus!

Now I must put a little warning here- do not make this dish if you are off to a job interview or a hot date later! The copious amount of raw onions may cause you to leave a lasting impression for all the wrong reasons!

Here's what you'll need:

  • 1 sweet potato
  • 1 small red onion
  • 1/2 pot of hummus
  • A handful of spinach leaves
  • A handful of cherry tomatoes
  • 1 inch of cucumber
  • A drizzle of olive oil
  • Ground black pepper

Instructions:

  • Preheat the oven to 200c/ 400F.

  • Pierce a few holes in the potato, wrap in tin foil and an place in the oven.

  • Cook for 45 minutes.

(Alternatively, if you want to go the suuper easy route, you can simply pierce the potato several times and cook in the microwave for 10 minutes, I won't judge you πŸ˜‰)

  • Meanwhile, chop the onion and the rest of your salad ingredients.

  • Once the sweet potato is cooked, cut it and drizzle with a little olive oil or vegan butter if required.

  • Then scoop on a generous amount of hummus and sprinkle the onions on top.

  • Add black pepper as required and assemble your salad on the side, topped with a little olive oil.

And that's it, finito!

Some may say I've added an excessive amount of raw onions but I disagree!

The red onion works so perfectly with the sweetness of the potato and the rich flavour of the hummus- the result is so damn tasty 😝
