VEGAN COCO BERRY LAYERED BREAKFAST SMOOTHIE.
You may think this is quite the artful creation
first thing in the morning but something I learned from working in bars & fancy resorts making cocktails in my 20’s was that the simple placement of a tablespoon when pouring a second layer was all that was needed to create gorgeous layers in drinks!
And hey, what a pretty way to start the morning!
This doubled layered creamy smoothie full of superfoods & protein to get your day off to a healthy & delicious start consists of a mix of bananas, coconut yoghurt, cacao, berries, rice proteins and so much more!
The trick to creating layers is to blend the lighter coloured ingredients together & then all the rest to make the second layer.
So I start by combining a banana, the shredded coconut, coconut yoghurt, rice protein & the 2 dates with about a cup of rice milk & blend to create your creamy white layer.
(Add some water or more milk if it’s too thick)
Pour this into your glass & start on the berry layer.
Pop another banana, a handful of raspberries & blueberries, a scoop of papaya, a tablespoon of cacao, goji berries, a tbs of açai powder, a handful of activated almonds & another cup of rice milk. Blend until it’s nice & smooth.
Get you tablespoon & place it between the creamy layer in your cup & slowly start pouring the berry layer in.
Top with your fav nuts & berries.. I love adding some activated chocolate buckwheat, pecans, goji berries, raspberries sometimes a few mint leaves as a garnish & a sprinkle of love of course.

INGREDIENTS:
2 cups of rice milk
2 bananas
A handful of shredded coconut
A few scoops of coconut yoghurt
A scoop of papaya
2 tbs rice protein powder
1 Tbs cacao powder
2 dates
A handful of activated almonds
1 cup of mixed raspberries & blueberries (frozen is fine)
1 Tbs goji berries
1 Tbs açai powder (optional)
Optional:
Activated chocolate buckwheat
Pecans
A few mint leaves
