The Vegan Project Day 3
Hello again stemians. If any of you were logging in expecting to see a new blog post by me yesterday then i do apologize. It was a long hard day at Mealhound HQ and so i decided to have a bit of a rest day but to make it up to you I've come back with 2 new items which i would love for you to try and let me know how you get on. So here goes.....
Brown Lentil and Vegan Protein Burrito
This will make for 1 so just double up for 2, triple for 3 and so on.
Ingredients
For the burrito
1 Tortilla Wrap per person
125 of cooked brown Lentils (you can just boil these in some vegetable stock until soft)
90-100g Vegan Protein (the stuff i used was sort of breaded chicken style pieces)
1/2 sliced pepper
Grated Vegan Cheddar to taste
For the Salsa
a Can of tomato Passata or Chopped tomatoes
1/2 a banana shallot (red onions are fine too)
1 whole Salad tomato
1/2 a Pepper
1 large clove of garlic
1/2 tsp of stevia / sugar
1/2 tsb Garam Masala Powder
a squeeze of lime juice
Chili flakes or powder to taste
Method:
warm all the ingredients for the burrito apart from the wrap. Just heating them all on a tray, gently in the oven until they are nice and warm is fine. Whilst this is happening make up your salsa. Start by dicing up your onion, pepper and tomato, crush the garlic either with a knife or a garlic press. mix together well.
Add in the lime, Sugar/Stevia and Garam Masala and mix well. Cover with enough of the passata that it is covered generously but still quite chunky. Split this mix into two bowls and put one aside for now. In the other mix all the hot ingredients for the burrito with the Salsa. Then start loading up your Burrito
Make a nice line with your burrito mix and top with Vegan cheese as seen in the photo above. To roll it, tuck up the two sides and then roll as tightly as you can. Place the burrito on a baking tray, top with a line of the salsa you put to one side, finish with some more grated cheese. You can add some Jalapenos if you like it really spicy as well. Bake in the oven at a medium heat (180/350 degrees), until the cheese melts but keep an eye that the tortilla doesn't burn. I served it with a little pot of oaty creme fraiche and a salad as you can see from the photos. I honestly think this is as good as any non vegan burrito but let me know what you think!
Second up is dessert! I figured as i still had quite a bit of the oaty creme fraiche i would knock up a lovley little.....
Vegan Eaton mess.
Really simple this one, I made my own aquafaba meringues which maybe i will show you how to do one day but lets keep it simple and say use shop bought. The only thing you will need is these, some oaty creme fraiche, a spoon of sugar and whatever soft fruits or berries you fancy. I used Papaya, Pomegranate and some Blueberries.
Start by dicing up your fruit if necessary or just mash it up a bit if it's berries. Sweeten up your oaty creme fraiche with a tsp of sugar. Get a nice glass if you'd like to present if as in the photo above but really you can serve it in whatever.
Layer the glass by utting in a layer of fruit, a layer of creme fraiche, layer of fruit, layer of creme fraiche. Finish by crumbling over your meringues and finish with a few berries and some chopped up mint if your looking to make it pretty!
