Friday night is Pizza night ! I've been working on my pizza base recipe for a while now, and it's taken some trial and error to actually develop a recipe that doesn't just fall apart in your hands. I've tried both cauliflower and zucchini pizza bases, and have developed my own recipe which incorporates both! If ever you feel like trying a more nutritionally beneficial version of a classic pizza base, give this a try and let me know how it works out for you :)
RECIPE: For one (yes, for one):
- 1/2 head of cauliflower- grated using largest grater edge
- 2 small zucchinis - grated using largest grater side
- 1/4 brown onion- diced
- 1/4 cup coconut flour
- 1/4 cup bread crumbs
- 1 flax egg* (recipe below) - using LSA meal and/or chia seeds
- 1 small clove garlic- crushed
- 1 tsp. Baking powder
- 1 tsp. Bi Carb Soda
FLAX EGG:
- Put 2 tbsp of chia seeds, LSA meal or 1 tbsp. of each into a small bowl (I always use both.)
- Pour 4 tbsp water into the mixture and set aside for 5-10 minutes until water is absorbed.
- Place cauliflower and 4 cups of water in a large saucepan over high heat and bring to boil (approx. 5 mins)
- Strain cauliflower and, using a tea towel, wring out as much excess water as you possibly can (make your muscles burn!)
NOTE: The more water you remove in this stage, the more your base will stick together and the crispier it will become during cooking. - Preheat the oven to 180'C on bake
- Place cauliflower into a large bowl with all other ingredients and stir until combined.
- (optional) add any herbs or spices that you would like.
- Add enough water (around 2tbsp.) for base to bind. If you grab a small handful and squeeze, it should hold together.
- Spread onto a lined baking tray and cook for 20 minutes. Change oven to grill and cook for an additional 5 minutes.
- Remove from oven and top as you please ! I did add some cheese to mine :)
