It's almost summer time in the Northern hemisphere! And a lot of people are already using the great weather for a barbecue with family or friends. In case you rather stick to raw vegan foods this refreshing summer dish is for you.
These summer lettuce boats are easy to make yet exciting in their taste by combining fruity goodness, salty flavours and a big portion of summer vibes.
Raw or Vegan in Social Settings
I always love to bring raw vegan meals along to social gatherings especially when I know that the majority of people there eat differently. This way, I can make sure that I don't stay hungry and also surprise my family or friends with some raw goodies. And most often they are all very excited about my unique food and even asked for the recipe after tasting.
There is no need to preach about the raw or vegan lifestyle when meeting friends and family. Let the food speak for itself and then be happy to answer any curious questions you are approached with.

Recipe for Summer Lettuce Boats
This counts for one portion only, so multiply accordingly to make sure that everyone gets to try your delicious summer lettuce boats.
5-10 lettuce leaves
1 1/2 cup pineapple
3 medium tomatoes
5 halves dried tomatoes
2 tbsp dulse flakes
1 tbsp red onion
4 tbsp lemon juice
1 tbsp parsley
Optional: 1/4 tsp smoked paprika
Finely cut up the pineapple, tomatoes, dried tomatoes, red onion and parsley.
For the filling, mix everything together including the lemon juice, dulse flakes and smoked paprika if desired.
Optional: Let the mixture marinate for 1-2 hours for a richer taste.
Just before eating, put the filling into the lettuce leaves and garnish with some leftover parsley if you want. Enjoy!
You have the perfect combination of flavours in here with the sweetness of tomatoes, the sour taste of pineapple and lemon as well as the salty twist with the dried tomatoes and dulse flakes. On top, a bit bitterness brought along with the parsley.
