Hey guys,
Hope you're all doing well! So, I got an idea about how I can become more consistent with sharing the things I love with the world via Steemit. It's called, "The Meal Idea Minute" where I will make a one minute video and a short post about something I cooked today to hopefully inspire vegans and non-vegans alike to get in the kitchen and be creative. I already cook everyday and I love encouraging people to lead a fit and healthy lifestyle (even if you're on a budget) so why not share it here?! Here's one of the meals I whipped up today. Enjoy!
I was feeling in the mood for something Asian-inspired with loads and loads of veggies today. Probably because I ate a few too many DELICIOUS, but fatty, fries at the vegan fast food joint called Earth Burger in San Antonio yesterday lol don't judge me. Let's get right to it! Keep in mind that it's always best to buy organic ingredients, but if you're not able to, conventional produce is still WAAAAYYYY better for you than a whole bunch of super processed foods. Also, this meal probably costs about $3 per serving since I shopped at Aldi and was smart about buying organic produce at Natural Grocers while it was on sale!
Ingredients:
-Vegan butter or oil
-Flour tortillas
-White rice
-Broccoli
-Shredded carrots
-Mushrooms
-Collard Greens
-Onion
-Asian Patties (From Aldi)
-Kimchi
-Avocado
-Seasonings to taste (cilantro, sea salt, pepper, garlic powder. lime juice)
-Sauces to taste (Soy sauce, teriyaki sauce, chili sauce)
Directions:
1. Cook the rice according to the instructions on the package (I mixed about 2 cups of water with about 1 cup of rice and added a pinch sea salt and earth balance vegan butter to the pot. I then brought it to a boil, reduced heat and covered it with a tight lid).
2. Next, I preheated the oven for the Asian Patties according to the instructions on the box.
3. Add Earth Balance to a skillet. As it melts, add sliced onion and garlic powder. Saute until onion is nearly translucent. Add the carrots, broccoli and mushrooms along with the seasonings and sauces to the skillet. Continue to saute for about 7-10 minutes over medium heat.
4. Go ahead and put your Asian Patties into the oven and cook them according to the instructions on the box.
5. Remove the skillet from heat, take the Asian Patties out of the oven, and assemble all the cooked ingredients in the flour tortillas. Top it off with kimchi, avocado and it's time to CHOW DOWN BABY, YEAH!
