In preparation for my baby's upcoming arrival, I embarked on a cooking project to cook a variety of food items and freeze them in our fridge at home. The purpose is to ensure we always have some cooked food at home, when we are too busy to cook the first month with our newborn.
Previously, I made some Banana Oat Muffins, Blueberry Oat Muffins and Matcha Pancake Muffins and Meatloaf.
Last night, I made a freezer friendly Vegan Creamy Curried Cauliflower Soup. This soup is not only super easy to make, it is also super healthy. Further, the texture and flavour of this soup is unbelievably good!
The creamy texture comes from the coconut milk, together with the curry powder and turmeric, the soup turns out to be super yummy!
Again, it takes very little time to prepare. You simply cook down the onions, garlic with cauliflower and spices. Once they all mixed well, then add water and some coconut milk. When ready, add whatever healthy veggies you have in the fridge. For me, I added some corns and spinach.
In my opinion, this hearty vegan soup makes a perfect light dinner with some fresh bread, and it also serves as a great lunch the next day too. As a matter a fact, I had it for lunch today and then I packed the rest in a container to store in the freezer.
