Vegan Quinoa and Beans With Veggies Recipe - Quick & Easy To Make!

Here's a quick and filling vegan meal.

A fast, healthy and filling vegan meal that even meat enthusiasts will love!

Veggies with Quinoa and Beans

Active ingredients
1 tsp. olive oil
1/6 cup of water
1 zucchini, halved and sliced into strips
1 cup frozen small carrots (or fresh).
1/2 fennel, sliced.
1 cup cauliflower florets.
1 tsp dired oregano.
1 cup prepared borlotti beans (can replace other beans).
1/2 cup prepared quinoa *.
Salt & pepper to taste.

Optional:.
Roasted squash seeds.

Instructions.
Heat 1 tsp olive oil and water in a big frying pan. Include all veggies and cook for 15 minutes, stirring regularly. Include the rest of the active ingredients and cook another 2 minutes. Put onto plates and garnish with squash seeds.

  • If you have not actually prepared quinoa, you can prepare it as you're preparing your veggies then mix in when including the beans.

Serves 2-4.
