The perfect light dinner or healthy lunch to make for friends and family on a beautiful summer day!
Here's our ingredient list:
First we prepare the tofu:
Start by draining and slicing the tofu into bars.
Press your tofu between paper towels to help dry them.
~You can place a heavy pan or book on top and set aside to dry for at least an hour but up to 3.~
Next, place the tofu in a ziplock bag with enough garlic chili sauce to coat all tofu bars.
Set aside for 1-4 hours.
Next is the breading.
Coat tofu bars by pressing the crumbs in the bars.
Fry immediately.
~Try not to move the bars too much as this will make the crumbs fall off.~
Fry on all sides.
Coconut Cashew creme:
Soak half cup of cashews for 4 hours or up to overnight.
Put drained cashews in blender
Add half cup coconut cream
The zest and juice of one lime.
Pulse until smooth
Fresh simple salsa:
Pulse one tomato, half an onion, two cloves of garlic and some parsley
Until desired chunkiness
Assemble tacos:
Add fresh veggies
Avocado
Optional jalapeño slices
~Top off with squeeze of fresh lime and enjoy!~
