This past Saturday I hear my daughters foot steps leading up to our door. She gets real close to my face and says, "good morning mama!" It's the best. And like every other Saturday I ask her what she would like for breakfast. No surprise what so ever she yells, "PANCAKES!" After some convincing she pulled me out of bed. She hasn't quite understood on weekends you can sleep in. Frankly, my daughter doesn't like to sleep. I'll leave that for another story. On to the recipe!
It's taken me a few tries to perfect vegan pancakes but I think we finally got it.
Vegan Pancakes
2 1/2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking soda
1/2 teaspoon salt
2 cups nondairy milk (I like almond milk)
1 banana mashed
In a bowl whisk all the dry ingredients. Form crater in the middle and add mashed banana and milk. Again, mix thoroughly but not too much! You wouldn't want stiff pancakes. When you're done mixing they're ready for the griddle.
I love making pancakes on the weekends because I can bulk up on the amount and freeze the leftovers. Not only do they taste great, I don't feel bad about eating them. We try to cook vegan at home as much as we can. (My husband loves cheese too much to switch.) When I'm done with my extravagant breakfast with fruit and pancakes we usually have a second breakfast-- SMOOTHIES.
