Most exchanges will update and your coins should be safe. If they don’t update then you don’t get your coins. Keeping coins on any exchange is risk, not least from hackers. If any exchanges or dev offically state they are upgrading you should trust them. If not then you are taking a chance.

To use the new wallet:
Backup wallet.dat, (Click File, then Backup in the wallet)
Close old wallet.
Run new wallet.
Wait 30mins before reporting any problems.
Why fork?
The fork is designed to force exchanges and pools to use the new Stealth \ Wraith version. Some exchanges and pools did not update when a softfork was tried and transactions got stuck. Any exchanges and pools that do not update on a hardfork get left behind, until they do.
Are we getting new coins?
No new coins are being added to balances.
Can I update my own wallet later?
You will have around 6 days to update your wallet and all your funds will still be completely accessible. (Its is not clear after this if your funds are gone) It reads like you will no longer beable to use the old wallet after 6 days, as your coins will be on the new blockchain, and services for the old blockchain will be shutdown. I wouldnt bet my coins on it though, be safe.
Can I delete the old wallets?
Yes, but just the 3.0 folder, not the %appdata%\VERGE stuff.
Electrum wallets?
They are connected to a server and should not require any changes, as it happens on the server not on your wallet front end.
Android wallets?
They have already been done!
