3-4 Garlic Cloves (minced)

1 tsp Salt & Pepper
150g Light Cream Cheese (Philadelphia Lightest recommended)
1/2 cup Pasta Water (reserved after cooking pasta)

Step-by-Step Instructions
Step 1: Prepare the Pasta
Bring a large pot of water to a boil, add a pinch of salt.
Cook the fusilli pasta according to package instructions until al dente.
Reserve 1/2 cup of pasta water, then drain the rest and set the pasta aside.
Step 2: Cook the Beef
Heat 1 tsp olive oil in a medium pan over medium-high heat.
Add the lean beef mince, Italian herbs, paprika, salt, and pepper.
Break the beef into smaller pieces using a spatula and cook until browned.
Once cooked, remove from heat and set aside.
Step 3: Make the Sauce
Heat 2 tsp olive oil in the same pan over medium heat.
Add minced garlic and sauté until fragrant (about 1 minute).
Add chopped tomatoes, bell pepper, Italian herbs, paprika, salt, and pepper.
Cook until softened (about 5 minutes). Remove from heat and let cool slightly.
Transfer the mixture to a blender or food processor and blend until smooth.
Step 4: Combine Everything
Return the blended sauce to the pan and stir in the light cream cheese until melted.
Add the reserved pasta water gradually to reach your desired sauce consistency.
Mix the cooked pasta and beef into the sauce. Stir well to coat evenly.
Let everything simmer for 2 minutes to allow the flavors to combine.
Step 5: Garnish and Serve
Garnish with freshly chopped parsley and a sprinkle of Parmesan cheese, if desired.
Serve immediately and enjoy!
